Ingredients:
- 1 cup orzo pasta
- 1 tbsp butter
- 1 tbsp olive oil
- 2 cups mushrooms, sliced
- 2 cups baby spinach
- 2 cloves garlic, minced
- ½ cup grated Parmesan
- 1½ cups vegetable broth
- Salt & pepper to taste
Instructions:
- Cook orzo according to package instructions; set aside.
- In a pan, heat butter and olive oil. Add mushrooms and garlic, cook until mushrooms are soft.
- Add spinach and stir until wilted.
- Stir in the orzo and vegetable broth. Simmer until creamy.
- Add Parmesan, stir, and season to taste.
