For the Mango Salsa:

  • 1 ripe mango (diced)
  • ¼ red onion (finely chopped)
  • 1 jalapeño (seeded + diced)
  • 2 tbsp chopped cilantro
  • Juice of ½ lime
  • Pinch of salt

For the Avocado Slaw:

  • 2 cups shredded cabbage (green or purple)
  • 1 ripe avocado
  • Juice of 1 lime
  • 2 tbsp Greek yogurt
  • Salt & pepper to taste

Other:

  • 8 small corn or flour tortillas
  • Optional toppings: pickled onions, hot sauce, crumbled queso fresco

🔥 Instructions:

  1. Marinate the chicken: In a bowl, mix sliced chicken with chipotle, olive oil, honey, lime, garlic powder, and salt. Let it marinate for 15 minutes.
  2. Make the mango salsa: Combine all salsa ingredients in a bowl. Stir gently and refrigerate.
  3. Prepare the slaw: In a bowl, mash avocado with lime juice and yogurt until smooth. Toss with cabbage. Season with salt and pepper.
  4. Cook the chicken: Heat a skillet over medium-high heat. Cook marinated chicken slices until charred and cooked through (about 6–8 minutes).
