📝 Ingredients:

For the Salmon:

  • 2 salmon fillets (skin-on or off)
  • Salt & black pepper to taste
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic (minced)
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1 tsp chopped fresh thyme or parsley
  • Lemon slices (for garnish)

For the Asparagus:

  • 1 bunch asparagus (trimmed)
  • 1 tbsp olive oil
  • Salt & pepper
  • Optional: grated Parmesan

🔥 Instructions:

🌿 Step 1: Roast the Asparagus

  1. Preheat your oven to 425°F (220°C).
  2. Place asparagus on a baking sheet. Drizzle with olive oil, season with salt and pepper, and toss.
  3. Roast for 12–15 minutes, flipping halfway. Sprinkle with Parmesan during the last 3 minutes if using.

🧄 Step 2: Cook the Salmon

  1. Season salmon fillets with salt and pepper.
  2. Heat olive oil in a skillet over medium heat.
  3. Place salmon skin-side down (or presentation side if no skin) and sear for 3–4 minutes without moving.
  4. Flip, then reduce heat slightly. Add butter, garlic, lemon zest, and herbs to the pan.
  5. Tilt the pan and spoon the melted garlic butter over the salmon for 2–3 more minutes until fully cooked through.

🍋 Step 3: Plate & Serve

  1. Plate the salmon over a bed of roasted asparagus.
  2. Spoon extra garlic butter from the pan on top and finish with fresh lemon slices.
  3. Serve immediately with rice, couscous, or crusty bread if you like.
