For the Buffalo Cauliflower:
- 1 medium head cauliflower (cut into florets)
- ยพ cup flour
- ยพ cup water
- 1 tsp garlic powder
- 1 tsp smoked paprika
- ยฝ tsp salt
- 1 cup buffalo hot sauce (like Frankโs)
- 2 tbsp melted butter (or vegan butter)

For the Ranch Slaw:
- 2 cups shredded cabbage (purple + green mix)
- ยฝ cup shredded carrots
- ยผ cup Greek yogurt or vegan mayo
- 1 tbsp lemon juice
- 1 tsp garlic powder
- 1 tsp dried dill
- Salt & pepper to taste
Other:
- 8 small flour or corn tortillas
- Chopped green onions or cilantro
- Optional: sliced avocado, extra buffalo sauce

๐ฅฃ Step 1: Prep the Batter
- In a bowl, mix flour, water, garlic powder, paprika, and salt into a smooth batter.
- Toss cauliflower florets in the batter to coat.
๐ฅ Step 2: Bake the Cauliflower
- Preheat oven to 425ยฐF (220ยฐC).
- Spread battered cauliflower on a parchment-lined baking tray.
- Bake for 20 minutes, flipping halfway.
๐ถ๏ธ Step 3: Add Buffalo Sauce
- Mix buffalo sauce with melted butter.
- Brush or toss baked cauliflower with the sauce.
- Return to oven for 10 more minutes to caramelize.
๐ฅฌ Step 4: Make the Ranch Slaw
- In a bowl, mix cabbage, carrots, yogurt, lemon juice, garlic powder, dill, salt, and pepper.
- Toss and chill until ready.
