For the Pasta:
- 8 oz fettuccine or penne pasta
- 2 tbsp olive oil
- 2 boneless, skinless chicken breasts (sliced thin)
- Salt & pepper to taste
- 1 tsp Italian seasoning
For the Sauce:
- 2 tbsp butter
- 4 cloves garlic (minced)
- ยฝ cup sun-dried tomatoes (chopped)
- 1 cup heavy cream
- ยฝ cup chicken broth
- ยฝ cup grated Parmesan cheese
- 1 cup baby spinach
- Red pepper flakes (optional for heat)
- Fresh basil for garnish

๐ Step 1: Cook the Pasta
- Bring a large pot of salted water to boil.
- Cook pasta according to package directions until al dente. Reserve ยฝ cup pasta water before draining.
๐ Step 2: Sear the Chicken
- While pasta cooks, season sliced chicken with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat.
- Sear chicken slices for 5โ6 minutes until golden and fully cooked. Remove and set aside.
๐ง Step 3: Build the Sauce
- In the same skillet, melt butter. Add garlic and sun-dried tomatoes and sautรฉ for 1โ2 minutes until fragrant.
- Pour in heavy cream and chicken broth. Stir gently and bring to a simmer.
- Stir in Parmesan cheese and a pinch of red pepper flakes. Simmer for 3โ4 minutes until slightly thickened.
๐ฅฌ Step 4: Finish the Dish
- Toss cooked pasta and chicken into the sauce. Add reserved pasta water a little at a time if needed to loosen the sauce.
- Stir in spinach and let it wilt for 1โ2 minutes.
- Taste and adjust seasoning if needed.

- Plate the pasta generously, sprinkle with extra Parmesan, and top with fresh basil.
- Serve immediately with garlic bread or a light side salad.
