  1. Heat a small nonstick skillet over medium heat with butter.
  2. Crack in the eggs and cook sunny-side up, over-easy, or however you love ’em.
  3. Season with salt and pepper. If using cheese, place it over the eggs in the last minute to melt.

  1. Warm or lightly toast the halved croissants in a skillet or toaster oven.
  2. You can spread a little butter, mayo, or hot aioli inside if you want extra flavor.
