Savory Breakfast Galette with Herbs and Cheese
Ingredients
For the pastry:
- 1¼ cups all-purpose flour
- ½ teaspoon salt
- 6 tablespoons cold butter, cubed
- 3-4 tablespoons ice water
For the filling:
- 6 large eggs
- ⅓ cup heavy cream
- 4 oz goat cheese, crumbled
- 2 tablespoons fresh chives, chopped
- 1 tablespoon fresh dill, chopped
- 1 medium zucchini, thinly sliced
- 6 cherry tomatoes, halved
- Salt and freshly ground black pepper

- Make the pastry: Mix flour and salt in a bowl. Cut in cold butter until mixture resembles coarse crumbs. Gradually add ice water until dough comes together. Wrap and chill for 15 minutes.
- Prepare filling: Whisk together eggs, cream, half the herbs, salt, and pepper in a bowl. Set aside.
- Roll the dough: On a floured surface, roll pastry into a 12-inch circle. Transfer to a parchment-lined baking sheet.
