🥣 1. Soak the Chickpeas
Rinse the dried chickpeas and soak them in plenty of water for 8–12 hours (overnight). They will triple in size.
🔪 2. Blend the Falafel Mixture
Drain soaked chickpeas. In a food processor, add chickpeas, garlic, onion, parsley, cilantro, coriander, cumin, and salt. Pulse until you get a coarse, grainy paste. Scrape the sides often. Do ない over-process.
Transfer to a bowl. Add flour and baking soda. Mix thoroughly. Chill the mix for 30–60 mins if you can (helps with shaping).
🍳 3. Fry the Falafel
Heat oil in a deep pan (about 2 inches deep) to 350°F (175°C). Shape the falafel using wet hands or a scoop into small balls or patties.
Fry in batches until golden brown and crispy (about 3–4 minutes per side). Drain on paper towels.
🥄 4. Make the Tahini Sauce
Whisk tahini, lemon juice, minced garlic, salt, and cold water until creamy and smooth. It may seize up at first—keep whisking until it loosens.
🌯 5. Assemble the Wraps
Warm the pita slightly. Spread a spoonful of tahini sauce, add 3–4 falafel pieces, top with veggies, herbs, and pickles. Drizzle more tahini sauce on top.
Wrap it up tight or serve it open-style like a flat sandwich.

- ❄️ Freezer Friendly: Uncooked falafel balls can be frozen. Flash-freeze on a tray, then transfer to a freezer bag.
- 🧁 No Frying? Air fry or bake falafel at 400°F (200°C) until crispy (about 20 minutes, flipping halfway).
