Crispy Chili Garlic Udon Noodles with Jammy Eggs


🛒 Ingredients:

  • 🧊 Ice bath (to stop cooking)

Step 1: Make the jammy eggs

  1. Bring a small pot of salted water to a boil.
  2. Gently lower in the eggs and boil for exactly 6 minutes.
  3. Transfer immediately to an ice bath and let sit 5–10 minutes.
  4. Peel carefully and set aside.

Step 2: Cook the udon noodles

  1. Boil the noodles according to package instructions (usually 2–3 minutes).
  2. Drain, rinse lightly with warm water, and set aside.

Step 3: Infuse the oil

  1. Heat neutral oil in a nonstick pan over medium heat.
  2. Add garlic slices and stir constantly until golden (1–2 mins). Remove and set aside for topping.
  3. In the same pan, add chopped green onions, stir 30 seconds.
  4. Add the cooked noodles and toss with soy sauce, sesame oil, rice vinegar, and chili crisp.
  5. Let noodles sit for 30 seconds untouched to crisp slightly, then toss again. Repeat once more for crispy caramelization.

Step 4: Assemble the dish

  1. Divide noodles into two bowls.
  2. Halve your jammy eggs and place on top.
