- 6 boneless, skinless chicken thighs
- Salt & pepper to taste
- 1 tbsp olive oil
- 3 cloves garlic (minced)
- ½ cup sun-dried tomatoes (sliced)
- 1 cup heavy cream
- ¼ cup chicken broth
- ½ cup grated Parmesan
- 2 cups baby spinach
- 1 tsp Italian seasoning
- Optional: red pepper flakes for heat
- Fresh parsley for garnish
🔥 Instructions:
🍗 Step 1: Sear the Chicken
- Season chicken thighs with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat.
- Sear chicken 5–6 minutes per side until golden and fully cooked. Remove and set aside.
🧄 Step 2: Build the Sauce
- In the same pan, reduce heat and add garlic. Sauté 1 minute.
- Add sun-dried tomatoes and cook for 2 more minutes.
- Stir in cream, broth, Parmesan, Italian seasoning, and optional chili flakes. Simmer until slightly thickened (5–7 minutes).
🥬 Step 3: Finish It Off
- Add spinach to the sauce and stir until wilted.
- Return chicken to the skillet and spoon sauce over the top. Simmer another 2–3 minutes.
