  • 6 boneless, skinless chicken thighs
  • Salt & pepper to taste
  • 1 tbsp olive oil
  • 3 cloves garlic (minced)
  • ½ cup sun-dried tomatoes (sliced)
  • 1 cup heavy cream
  • ¼ cup chicken broth
  • ½ cup grated Parmesan
  • 2 cups baby spinach
  • 1 tsp Italian seasoning
  • Optional: red pepper flakes for heat
  • Fresh parsley for garnish

🔥 Instructions:

🍗 Step 1: Sear the Chicken

  1. Season chicken thighs with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Sear chicken 5–6 minutes per side until golden and fully cooked. Remove and set aside.

🧄 Step 2: Build the Sauce

  1. In the same pan, reduce heat and add garlic. Sauté 1 minute.
  2. Add sun-dried tomatoes and cook for 2 more minutes.
  3. Stir in cream, broth, Parmesan, Italian seasoning, and optional chili flakes. Simmer until slightly thickened (5–7 minutes).
