🛒 Ingredients
- 🧀 1 block feta cheese (about 7 oz)
- 🍅 2 cups cherry tomatoes
- 🛢️ ¼ cup olive oil
- 🧄 3 cloves garlic, minced
- 🌿 1 tsp dried oregano
- 🌿 1 cup fresh basil leaves
- 🍝 8 oz pasta (penne or farfalle)
- 🧂 Salt and pepper to taste
- 🌶️ Red pepper flakes (optional)
👩🍳 Instructions
- 🔥 Preheat oven to 400°F (200°C).
- 🧀 Place feta in center of a baking dish. Surround with cherry tomatoes, garlic, olive oil, oregano, salt, and pepper.
- 🔥 Roast for 30–35 minutes until tomatoes burst and feta softens.
- 🍝 Cook pasta while feta bakes. Drain, reserving ½ cup pasta water.
- 🥣 Mash feta and tomatoes together. Toss pasta into sauce. Add pasta water as needed to loosen.
- 🌿 Stir in fresh basil and serve hot with optional chili flakes.
