Beef and Mushroom Stroganoff

Ingredients

  • 1 lb beef sirloin, thinly sliced into strips
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 8 oz mushrooms, sliced
  • 1 tsp paprika
  • 1 tbsp all-purpose flour
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 cup sour cream
  • Salt and black pepper to taste
  • Fresh parsley (for garnish)
  • Cooked egg noodles or mashed potatoes (for serving)

Instructions

  1. 🔥 Sear beef: Heat olive oil in a skillet over high heat. Cook beef strips for 2–3 minutes until browned. Remove and set aside.
  2. 🧅 Sauté aromatics: Lower heat, add butter, then sauté onion and garlic until soft and fragrant.
  3. 🍄 Cook mushrooms: Add sliced mushrooms and cook until browned and reduced.
  4. 🌶️ Season and thicken: Stir in paprika and flour. Mix well for 1 minute to cook out the flour.
  5. 🥣 Add liquids: Slowly pour in beef broth while stirring. Add Worcestershire sauce and bring to a simmer.
  6. 🥄 Finish sauce: Reduce heat to low. Stir in sour cream. Return beef to pan and cook for 5 more minutes. Season with salt and pepper.
  7. 🍽️ Serve and enjoy: Spoon over egg noodles or mashed potatoes. Garnish with chopped parsley.
