Ingredients
- 20 jumbo pasta shells
- 1 tbsp olive oil
- 2 cups ricotta cheese
- 1 cup cooked spinach, drained and chopped
- 1 egg
- ½ cup grated Parmesan cheese
- 1½ cups shredded mozzarella cheese (divided)
- 2 cups marinara sauce
- ½ tsp garlic powder
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- 🍝 Cook pasta: Boil shells in salted water until al dente. Drain and set aside.
- 🥣 Prepare filling: In a bowl, mix ricotta, spinach, egg, Parmesan, 1 cup mozzarella, garlic powder, salt, and pepper.
- 🧤 Preheat oven: Set oven to 375°F (190°C).
- 🥄 Stuff shells: Fill each shell with about 1½ tbsp of the ricotta mixture.
- 🧄 Assemble dish: Spread 1 cup marinara in a baking dish. Place stuffed shells on top. Pour remaining sauce over them. Sprinkle with the rest of the mozzarella.
- 🔥 Bake: Cover with foil and bake for 25 minutes. Uncover and bake 5 more minutes until cheese is bubbly and golden.
- 🌿 Garnish & serve: Let cool slightly, then top with fresh basil before serving.
