📝 Ingredients:
- 2 fresh croissants (halved)
- 2 eggs
- ½ avocado (sliced or mashed)
- 2 slices cheddar or Swiss cheese
- 2 slices cooked bacon or turkey bacon (optional)
- 1 small tomato (sliced)
- Handful of baby spinach or arugula
- 1 tbsp butter
- Salt & pepper to taste
- Hot sauce or aioli (optional)

🥓 Step 1: Cook the Eggs
- Heat a small nonstick skillet over medium heat with butter.
- Crack in the eggs and cook sunny-side up, over-easy, or however you love ’em.
- Season with salt and pepper. If using cheese, place it over the eggs in the last minute to melt.
🥐 Step 2: Prep the Croissants
- Warm or lightly toast the halved croissants in a skillet or toaster oven.
- You can spread a little butter, mayo, or hot aioli inside if you want extra flavor.
🥑 Step 3: Assemble the Sandwich
- On the bottom half of each croissant, layer mashed or sliced avocado.
- Add tomato, cooked bacon (if using), egg with cheese, and a few spinach or arugula leaves.
- Close the sandwich gently with the top half of the croissant.
